I posted an assignment last night and it isn't showing up and my professor didn't give me any points for it. Is there any way to show that I did indeed turn in the assignment?

You should contact your school's help desk to see if they can verify the assignment was submitted by looking at the server logs. If it was and it is just gone, they can let your instructor know and then hopefully they would let you resend it to them.
